Hello World, I am back!  I really don’t have any excuses for why I stopped blogging.  Life got crazy and to be honest, I got really frustrated with some failed recipes.  But, today I am back with something delicious!  Roasted garlic hummus is super easy to make and tastes far better than those grocery store versions.  Better yet, it is at a fraction of the cost!

I am kind of a hummus rebel and for that reason, this recipe does not follow the normal guidelines of making hummus.  For example, with many recipes, you have to peal the garbanzo/chickpeas beans.  In my honest opinion, nobody wants to do that, so I did not.  And you know what, I really don’t see any textual difference.  The recipe is also lacking in tahini.  The reason why I do not make my hummus with it is because I do not like the flavor of tahini.  

Roasting the garlic gives the hummus a lovely, smooth garlic flavor without the bitterness of raw garlic.  If the garlic flavor isn’t strong enough, throw in some garlic powder.   Draining the beans and reserving the liquid helps cut the amount of olive in the recipe.  Trust me, even though this recipe breaks all the rules of making hummus, it tastes so good!  J


The lovely buttery garlic flavor, the spicy pepper and cumin, and the smooth texture of the beans creates a flavor profile unlike others.  I hope you enjoy this as much as I have!  J

Ingredients:
-1 can of garbanzo beans or chickpeas drained (reserve the liquid)
-1 bulb of garlic
-1 tablespoon of olive oil and ¼ cup of olive oil
-1/2 teaspoon ground pepper
-1/4 teaspoon salt
-1/2 teaspoon ground cumin
-1/4 teaspoon garlic powder (optional)

1.)    Preheat the oven to 400 degrees. 
2.)    Slice the top of the garlic off exposing the cloves.  Drizzle the tablespoon of olive oil over the head of garlic.  Wrap in foil.
3.)    Bake for 35-55 minutes.  The garlic should be soft and golden in color.
4.)    Allow to cool for 10-15 minutes. 
5.)    In a food processor, add the roasted garlic, beans, ¼ cup of olive oil, seasonings (except garlic powder), and 2 tablespoons of the reserved liquid. 
6.)    Blend until smooth.  If the hummus is too thick, add more of the reserved liquid at one tablespoon at a time.  Taste and adjust the seasoning.  If the garlic flavor is not strong enough, add the garlic powder.
7.)    Enjoy with pita chips and/or veggies.  J
